INGREDIENTS
6 apples, peeled, cored and chopped into chunks
1 tablespoon fresh lemon juice
1/2 cup packed light brown sugar
3/4 teaspoon cinnamon
pinch of Kosher salt
3 tablespoons unsalted butter
1 teaspoon pure vanilla extract

Streusel Topping
1 1/2 cup oats
1 cup chopped pecans
1/2 cup packed light brown sugar
1/4 cup flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
6 tablespoons cold unsalted butter

INSTRUCTIONS
1. Preheat oven to 350°F.
2. In a medium bowl, mix together the oats, pecans, flour, brown sugar, cinnamon, nutmeg, and salt.
3. Cut the 6 tablespoons of butter into small pieces and using a fork, gently work the butter into the mixture until it is incorporated fully.
4. In a large bowl, toss the apples with a tablespoon of lemon juice, brown sugar, cinnamon, and salt.
5. Over medium heat, melt the 3 tablespoons of butter in a 10-inch cast iron or oven-proof skillet.
6. Add the vanilla extract to the melted butter and stir for about a minute.
7. Increase heat for the skillet up to medium-high and add the apple mixture.
8. Cook for 5 minutes, stirring the apples gently in the vanilla butter.
9. Remove from heat and add the streusel topping; distributing evenly over the apples.
10. Place skillet in the oven and bake for 30 minutes.
11. Serve with vanilla ice cream or yogurt, if desired.
