Cool off with this refreshing lemon flavoured Italian Ice (granita). Easy to make and dairy free!

Ingredients
- 4 cups water
- 3/4 cup + 2 tablespoons white granulated sugar
- 2 tablespoons lemon zest
- 1 cup freshly squeezed lemon juice
- 1 teaspoon lemon extract
Directions
- Combine water with sugar ina microwave-safe bowl. Microwave for 2 minutes, or until the water is hot. Stir to dissolve sugar. Add lemon zest.
- Allow to cool to room temperature.
- Whisk in lemon juice and lemon extract. Pour into a 9×13-inch baking dish. Place in freezer. After about 40 to 45 minutes use a fork to stir up ice. Repeat every 30 minutes until lemon ice reaches desired consistency; about 3-4 hours. Note: The ice crystals should be finer than a snow cone.
