Packed with beneficial antioxidant rich fruits, Chef Daamian’s Caribbean Fruit Salad is light, naturally sweet, and good for you too!
Recipe from Chef Daamian Simmons – The Reefs
3 Navel oranges, peeled and segmented
2 cups fresh pineapple (small cubes)
1 cup strawberries, quartered
1/4 cup blueberries
2 kiwi fruit, peeled and thinly sliced
3/4 cup red onion, julienne
1/4 cup feta cheese, crumbled
2 Tbsp extra virgin olive oil
1 Tbsp fresh lemon juice
1 Tbsp sugar
1 Tbsp white wine vinegar
1 Tbsp honey
1/8 Tbsp Dijon mustard
Salt and pepper to taste
Fresh mint leaves, for garnish
Combine all fruits (oranges, pineapple, kiwi, blueberries,
strawberries) and red onion. Gently stir in crumbled feta cheese.
Whisk together olive oil, lemon juice, vinegar, sugar, honey and
Dijon mustard for vinaigrette. Season with salt and pepper.
Drizzle over fruit and serve with mint garnish, if desired.
